Well I have been playing in the kitchen
I made this at the suggestion of a woman at church. I made a few modifications and it was a good deal.
ingredients:
1 onion
1 red pepper
1 orange pepper
1 green pepper
(as many as you want) portabella mushrooms
1/8 tsp paprika
1/8 tsp pepper
1 tomato
salt (to taste)
2 tbsp olive oil
2 -3 cloves garlic
ginger
whole wheat tortilla
1. chop all of the vegetables as well as the ginger into strips, make the mushrooms strips a little thicker.
2. turn on a frying pan and saute the onions, and garlic cloves (3)
3. add the peppers, a dash of salt, and a dash of black pepper, paprika, and mushrooms.
4. Cook either al-dente or soft your choice.
5. When almost done cooking add the tomatoes (so you don’t overcook)
6. I added black beans which I drained them from the can…(this would also be good with refried beans)
7. Take the ingredients and put into a whole wheat tortilla.
I added homemade guacamole as well. I also added black beans. It was great and all the members of my household ate it….and enjoyed it.
