Spiced Carrots… A Healthy Daniel’s Fast Friendly Recipe

Since, I love the carrots at Maoz, and I really went looking for that recipe, but I couldn’t find it.
So I tried the Spiced Carrot Salad instead. These were good, they had great flavor and I followed most of the instruction except I didn’t mash them. I just kept them in slices I also used dried parsley instead of fresh, I am sure that had an effect on the taste. I also loved mixing them with the other items.

Carrot Macharmal (spiced carrot salad) – I modified this recipe:

Ingredients:
5 medium size carrots
3 garlic cloves
1/4 cup of chopped parsley
3 tablespoon of olive oil
1/2 – 3/4 teaspoon of salt (or to taste)
1/4 teaspoon of pepper (or to taste)
1/2 teaspoon of cumin
1 teaspoon of paprika

Steps:
1 – Peel the carrots, cut each carrot into thick slices or chunks.
2 – In boiling water, add the carrots and the 3 garlic cloves. Let them cook for 15-20 minutes.
3 – Drain the carrots and garlic from the water.
4 – In a cooking pan, drizzle the olive oil, add the carrots with the garlic, the parsley and the spices.
5 – Stir consistently.
6 – (When I made it I cooked) until the carrots were tender. This will take 15-20 minutes.

Note: This salad can be served warm or cold depending on the season.
