There is nothing like going to a party or an event and wondering if what you are bringing will be safe for everyone or just a fortunate few.
If you are gluten-free or you know someone who is this recipe is going to be right up your alley. It is easy, fun to make and really hard to mess up!
This recipe is a great to bring to a breakfast meeting or to a get together. Guilt-FREE because it is also healthy. It will work for breakfast or for a nice snack.
Gluten-Free Blueberry Loaf With Brown Sugar Blueberry Butter
The best part about this recipe is that it is so EASY anyone can make it and you will be amazed that this goodie is not only healthy, but that it is also gluten-free and made by just adding a few extra steps from the instructions that come on the box.

This recipe takes about a hour and 10 minutes to make and it is really easy.
The loaf will make about 7-10 servings depending on the size of the slices.
INGREDIENTS:
- 1 box of Krusteaz Gluten-Free Blueberry Muffin Mix
- 1 cup of fresh blueberry
- 1/4 cup of water
- 1/4 cup of oil
- 3 eggs
- 2 tablespoons of butter
- 1/4 cup of water
- 1/4 teaspoon of brown sugar
Here we go..
Preheat your oven to 400 degrees
Start with your three eggs, crack the eggs and put them in the bowl.
Add the 1/4 cup of oil to the to the bowl
See how easy this is… we are almost done!
Add the 1/3 cup of water to the bowl..
Take 1/3 cup of the fresh blueberries and the blueberries that come in the tin, rinse them off with cold water and add them to the mix
Now your batter is ready for the loaf pan and the oven..make sure you don’t forget to put oil on the sides so the loaf doesn’t stick to the pan.
Now it is time to prepare the Blueberry Butter (this will take about 10 minutes)
Take out a sauce pan and turn it on medium heat
Add the 2 tablespoons of butter
Add the remainder of the Blueberries 2/3 cup
Add 1/4 cup of water and a 1/4 teaspoon of brown sugar… you can double this recipe if you want more butter on your loaf.
The blueberries will start to reduce as you cook them…
Keep an eye on your loaf, it takes at least 50 minutes to cook, but that will depend on your oven.
Ok, now back to that butter sauce..
It’s about done…just let it cook down a little more
Now the loaf is done… take it out and let it cool.
Drizzle the blueberry butter over the loaf slices and serve warm…
Add extra blueberries to your plate and eat away…not only is this loaf incredibly moist the Blueberry butter sends it over the top…
You can also add extra blueberry both raw or cooked to make this loaf even better…
This was such a great hit! Even my picky hubby had some, it flew off plates and will still just as moist when we ate it later on that day. You can add the topping or leave it off, it’s totally up to you!

Add a very light coating of powdered sugar to give it an extra added BOOM!

Replace the butter with olive oil, or you can skip it all together or you can use a little instead of a lot.
